SIMPLE SLOW COOKER MEALS ARE PERFECT FOR BUSY MOMS!

I’ve said it before and I’ll say it again, I’m not a master chef and I don’t (always) enjoy cooking. But I do like to eat good food. One of my favorite, healthy recipes right now is Crock Pot 3-Bean Turkey Chili

Last Christmas my husband surprised me with the slow cooker I asked for and it is now one of my go-to kitchen gadgets. I personally believe every mom should have one in her kitchen to make meal prep a breeze.

Plus, it also makes for very little cleanup.

The only thing I dislike more than cooking is the cleanup. I honestly can’t wait until my kids are old enough to do the dishes.

But until that time comes I’ll continue to thank the Lord for my crock pot and my favorite 3-Bean Turkey Chili.

WHAT YOU’LL NEED:

  • 1 pound lean ground turkey
  • 1-2 cans 3-bean blend
  • 1-3 cans organic tomatoes with green chilies
  • 1 tablespoon cumin
  • 1-3 teaspoons chili powder
  • 3-5 tablespoons salsa (Organic Jacks is my favorite)
  • 1 onion, chopped
  • 1 green or red bell pepper, chopped
  • 1 cup of fresh or frozen yellow corn

WHAT YOU’LL DO:

  • Brown ground turkey.
  • Add all ingredients into crock pot.
  • Cook all ingredients on low for 6 hours or high for 4 hours.
  • Add sea salt to taste.
  • Top with fresh avocado slices or cheddar cheese (optional).

Three-Bean turkey chili is great alone or served over brown rice or baked french fries.

You can also try pairing with a small salad, naan, or whole grain crackers.
